[dropcap letter=”S”]ix months ago, Seafolk Coffee opened in Rockport without a sign, website, or phone, but from day one, they were packed. Locals took to the low-key, harbor-view hangout — and to the toasts. “We have four boys, and we eat this way when we’re on the go, throwing lots of ingredients on toast,” says Jacob Wienges, who owns the café with his wife, Madrona. “We’re playing on traditional Danish open-face sandwiches, smørrebrød.” Dense rye, from Damariscotta’s Barn Door Baking Co., provides a traditional base. Or there’s rustic white, from Rockport’s Maine Street Meats. Recently added to the menu is this colorful offering, with a corn, peach, and plum salsa, cilantro-chili-lime crema, and mussels smoked with tea, jasmine, coriander, and cinnamon bark, all garnished with edible flowers, pickled red onion, and sea blite. Notes Madrona: “You should see our condiment drawer at home.”
